I for one strip them, re-season them, then return them to service. I cook with them. You might be surprised to know there is a whole group of us out there doing some creative cooking/baking using charcoal and cast iron. If the price is right, Antique Shops, Estate Sales, and garage sales, are my favorite place to find old iron.
Both pies shown below were constructed in a standard glass pie dish. Then elevated slightly inside a Cast Iron Dutch Oven, via a trivet. Then baked using charcoal.
